Made in a traditional chabichou style from the Poitou region in France with 100% goat milk from Cliffton, Queensland.
There are three distinct ages at which to enjoy this cheese. It’s really a matter of personal taste and occasion or simply how long you manage to leave it in the fridge.
When the cheese is fresh, just a week or two old before it goes through the salting/maturing process, it is still quite soft. It is beautiful on its own, on toast with a nice jam or in a salad.
After it has matured, been through the salting process and left to age and grow a light penicillin mould like any “brie” cheese you find in the supermarket. It has a strong flavour and is great after a meal on some crusty bread with a beautiful red wine.
Aged for a month or two the cheese becomes more for the connoisseurs it is densely textured with complex flavours, it will have you speaking in tongue.
Gympie Farm Molten Gold.
This cheese is made from locally sourced cows milk it is very similar to a brie.
Gympie Farm Tango
Made from 60% goat milk and 40% cow milk.
Old fashion cultured butter, made from mostly jersey milk. Salted or Unsalted.
Culturing of the cream before churning has two practical benefits, first the acidification of the cream which adds a lactic acid that produces culture aids in the separation of the butterfat in the churning process. Secondly, the added live cultures consume milk proteins to produce this lactic acid and thus yields a more “pure” butter that has a longer storage life. It is the milk proteins that “spoil” or ferment the butter. Other than these practical benefits, culturing the cream before churning gives the butter a very unique flavor and with the lactic bacteria, makes it a healthier product.
The date on the lid represents the date it was churned.
Creme Fraiche
Cultured cream collected before we churn the cream to make our famous butter. It is great for cooking, it suits both sweet and savory foods.
Goat Yogurt
Just Plain home made yoghurt no added extras. Great healthy alternative in your recipes or drank straight from the bottle.
Traditional Butter Milk
In the butter making process, the buttermilk is collected after the cream is churned. It is another great product for cooking or simply drank straight from the bottle depending on your taste.
