Camille Mortaud, Founder and Head Cheese and Butter Maker at Gympie Farm Cheese
Gympie Farm Cheese is a family owned and operated business 100% Australian made.
Camille learnt how to make cheese the traditional way from his mother growing up in Poitiers, France. He moved to Australia in 1983 after doing voluntary work in Vanuatu where he met his wife. Then in 1992 while working as a mechanic in Nambour he stopped into a local goat farm in Gympie on his way home and after chatting with the farmer for a bit he decided he was going to try make cheese like his mother. Originally only making it for his family and a couple of friends, but after awhile, word got around. So in 1999 he decided to make it a business, just starting out with the Fresh and Matured Goat cheese. As the years went on, he started adding more products then in 2005 he moved from Gympie to Conondale but stayed with the name Gympie Farm Cheese, because he had built up a good brand and people knew him.
